Gurellu or karellu chatni(Niger or thistle seed chutni)


This is the one must chutni in north Karnataka specially in Bijapur, Bagalkot and koppal. It  tastes yummy, when mixed with curd or ground nut oil.  Gurellu chatni tastes good with curd rice, rotti, chapatti and hardened chapatti as well.Here we’ll see how to prepare gurellu chutni.

Ingredients:
2 cups of Gurellu (Niger or Thistle seeds),
4 peeled garlic cloves.
2 tbsp red chilli powder.
2 tbsp cumin seeds.
1 tbsp salt.


Preparation time:
20 mins.

Serves:
Serves 4 people.

How to prepare:
1.       Roast the Niger seeds in a shallow pan or kadai on low fire till they start giving roasted smell.
2.       Roast cumin seeds on low fire for about 2 mins.
3.       Mix all the ingredients in a jar and grind it in mixer.
4.       Serve with Roti and chapatti.

Jolada rotti(Jowar Roti)


Jowar Roti is part of daily dish for each of north Karnataka people. Specially for the people who are agricultural in professional. They start their day with jowar roti and Niger or thistle seed chatni mixed with curd. It tastes awesome.
Here we will see how to prepare jowar roti.

Ingredients:
2 cups of Jowar flour, 2 cup of water.

Preparation time:
10 mins.

Serves:
Serves 2 people.

How to prepare:
Ø  Put 1 cup of water in a container and heat it till it boils.
Ø  In a plain plate, take jowar flour. Make a small wel in the center.
Ø  Put the boiling water in this small well and cover it with the flour till it cools.
Ø  Once it cools, prepare smooth dough using addition warm water.
Ø  Now, place tawa on the burner and heat it.
Ø  Other side, prepare roti by tapping in round shape. Make sure you don’t turn in down. You should tap the roti on one side only.
Ø  Put the Roti on Tawa upside down. Apply water layer on top of the roti using a wet clothe.
Ø  Bake roti on both sides.
Ø  Serve hot rotis with curry or  Niger or thistle seed chutni.
Hint: water should be boiling when you put water in flour. This will help in getting very good shape and soft rotis.

Onion-tomato salad


This is an instant item that is prepared when you don’t have any of the vegetables at home and have only chapattis or rotis. It is served best with chapatti, roti and pulaov.
Ingredients:
1 onion
1 tomato
1 cup ground nuts.
3 green chilies.
Coriander leaves.
1 cup curd.
1 tsp Sesame seeds
¼ tsp hing, salt for taste.
1 tbsp oil.

Serves:
Serves 2 people.

How to Prepare:
1.       Cut onion, tomato and green chili into small pieces.
2.       Mix all these with curd into a bowl.
3.       Add salt, coriander leaves to this mixture.
4.       Fry ground nuts and grind them in mixer.
5.       Add this ground nut powder to the mixture and mix all these contents evenly.
6.       In pan, heat oil. Put sesame seeds and hing and stir for few seconds till sesame makes crackering sound.
7.       Add this to the above mixture and stir well.
8.       Serve the salad with chapatti or roti or veg pulaov.
